Let's talk about Salmon! Honestly this fish is one of the most nutrient-rich fish around. If this blog can convince you to eat Salmon at least once a week, then I have achieved my goal this week. 

So get ready! I could write a much longer list but will start with the greatest benefits. First of all, Salmon is rich in long-chain omega-3 fatty acids, which have been shown to reduce inflammation, lower blood pressure and decrease risk factors for disease.

Salmon is an incredible source of protein, an excellent source of several B vitamins, which are needed to give you energy production, to protect the heart and overall brain health. Now the next benefit is one that I particularly LOVE, which is that consuming salmon may help you control your weight by reducing appetite, boosting the metabolic rate, increasing insulin sensitivity and decreasing fat! So if you have not added Salmon to your diet, now is the perfect time to start.

The trick to the most awesome Salmon dish is to keep it simple! This recipe will take you only a few minutes to prepare and it tastes SO good. 

Ingredients

  • Salmon
  • your favorite herbs
  • olive oil
  • garlic
  • Lemon
  • Salt

Method

First of all, use your mortar and pestle to mash garlic and your favorite herbs (I used parsley, cilantro and chives) to a paste, add some olive oil and rock salt. When you have the paste ready, massage the salmon with it. Cut the lemon into thin slices and arrange half of the slices down the middle on top of the salmon.




Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. If your piece of foil is not large enough, place a second piece on top and fold the edges under so that it forms a sealed packet. Leave a little room inside the foil for air to circulate.

In the over: preheat to 375 F/190 C degrees Bake the salmon for 15-20 minutes, until the salmon is almost completely cooked through at the thickest part. The cooking time will vary based on the thickness of your salmon.

In the BBQ: Leave on bbq for about 10-15 minutes. Serve with grilled vegetables and a tomato salad.
