Spanish Tortilla
I lived in the Netherlands till 1989, and Growing up I was lucky enough to spend summers in Madrid to visit my grandparents, aunts and uncles, and cousins. One of my favorite dishes from this time is the tortilla. Potatoes, onions and eggs combines to make this delicious typical Spanish dish.
According to legend, during the siege of Bilbao, Carlist general Tomás de Zumalacárregui invented the "tortilla de patatas" as an easy, fast and nutritious dish to satisfy the scarcities of the Carlist army. Tortilla, in European Spanish, as well as some variants of Latin American Spanish means omelette. As such, a potato omelette is a tortilla de patatas or papas.
This is my favorite version with almost as many potatoes as onions and eggs! Use olive oil and rock salt for the best result. I like to serve my tortilla with grilled asparagus.
Ingredients
- 1/2 cup olive oil
- 5 medium-sized potatoes, thin slices
- 4-5 small onions, thin slices
- 6 eggs
- Salt, to taste
- parsley, to garnish (optional)
Recipe
Heat the oil in a nonstick medium-sized (30cm/12-inch) pan. First add the thinly sliced onion. The onions should fry for about 5 minutes, then add the sliced potatoes. Cook for about 15 minutes till soft and cooked throughout. Some of the potatoes and onions should have browned in some corners,
Beat eggs with salt to taste. Drain the potatoes and onions, and add the potatoes and onion to the egg mixture and add some of the leftover oil to the pan.When the pan is hot again, add the egg mixture - reduce the heat and depending on your pan, the cooking time will vary. After a few minutes you should be able to use a spatula under the tortilla to see if the bottom has browned. In order to flip the tortilla, cover with a plate and flip the pan onto the plate. Then you can slide the tortilla back to cook the other side for another 5-10 mins. Gently shaking the pan occasionally, until completely cooked through.
To remove the tortilla from the pan, place a clean plate on top of the tortilla and flip again onto the plate. Garnish with parsley (optional).
