Leche Nevada
Leche Nevada is a traditional Chilean dessert consisting of poached meringues in milk with cinnamon. This is simple, delicate and delicious.
Latin-America is known for milk-based dessert such as this one, but also tres leches cake, rice with milk and sugar.... The options are endless. When I told my (Chilean) father that we were featuring recipes with milk this week, he mentioned this was a traditional dessert that he used to eat at home, and I could not wait to try it. Ingredients
Meringue:
- 1 egg white
- 1 tablespoon sugar
- 2 cups milk
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 egg yolk
- 2 tablespoons cornstarch
- Cinnamon to sprinkle
- Cinnamon sticks
- Orange Peel (optional)
Meringue: In a small bowl, beat egg white with an electric mixer. Add 1 tablespoon of sugar and beat until you can turn the bowl over without the meringue falling out.
Milk Custard: In a saucepan, add 1-3/4 cups of milk, 2 tablespoons of sugar, orange peel, cinnamon sticks and 1 teaspoon of vanilla. In low heat bring to a simmer. Scoop some meringue with a spoon. Using another spoon gently transfer meringue from spoon to spoon, into milk.
Poach for 1 minute each side. Remove from heat and set them on a plate.
In a small bowl, mix well 1/4 cup of milk, 2 tablespoons of cornstarch and 1 yolk. Slowly pour this mixture into the milk and stir constantly over low heat. Let it cook for 2 minutes (stirring constantly).Refrigerate for at least 4 hours, then serve with cinnamon sprinkled over it.Enjoy this delicious desserts and definitely tag us on Instagram if you make it.
