Vegetarian Corn Chowder (Instant Pot)
Its been SO long since I have posted any recipes online! I have missed cooking and trying out new recipes. We were in France for a few weeks, and I was lucky because my husband did all the cooking all holiday.
We arrived back in Holland on Saturday and since it was kind of rainy and cold, I really wanted to make a hearty soup. I checked what ingredients we had and decided to try a new vegetarian chowder in the Instant Pot. If you do not have an Instant Pot, do not worry - you just need to simmer the vegetables for a longer time till you get the desired consistency.
Ingredients
- olive oil
- 2 x corn
- 1 big carrot diced
- 1 onion diced
- 2 cloves of minced garlic
- half a leek cut into small rings
- 2 potatoes diced
- some spring onion to garnish
- 1 liter vegetable broth
- 1,5 cups of milk
- 1/4 cup flour
Method (instant pot)
Turn on the Instant Pot, and saute all your vegetables until onion is soft. Add the broth and half the milk. Close and secure the lid and cook on Manual Medium for 7 minutes. At the end of the cooking time, quick-release the pressure and remove the lid. Meanwhile whisk the flour in the leftover milk. Turn Instant Pot on sauté mode and pour in the milk/flour mixture while stirring frequently till it reaches the desire consistency. Flavor with salt and pepper, and add spring onions for garnish.
Stovetop Method
Add oil to the pan and add onion/garlic stirring frequently, add the other vegetables and some flour and stirr another two minutes. Pour in the broth and boil for about 10 minutes. Add the milk, and keep stirring till desired consistency.
