Autumn Apple Spice Bread

This Autumn Apple Spice Bread is very easy to make, and can also be made using pumpkin purée instead, offering that same autumn cheer. Infused with the season’s favorite spices, - cinnamon, cloves and nutmeg - eating just a slice will surely make you feel warm and tingly inside! 


This bread is perfect for a chilly autumn afternoon tea-time, while sipping on a piping-hot cup of tea or coffee. If you’re feeling particularly decadent, add a dollop of butter on a slice while it’s still warm, or toast it first before adding the butter. 


NOTES:

  1. I used a fan-forced convection oven. 
  2. Dimensions of loaf pan used: length: 30 cm x  width: 11 cm x height: 5 cm
  3. Cooking time: 60-70 mins, mine was done in 60 mins. I suggest setting timer first for 60 mins and check if baked through using a skewer. If not yet cooked through, Place back in the oven for another 5-10 mins. 


INGREDIENTS:

2 cups (280 g) all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground nutmeg

1 tsp ground cinnamon

3/4 tsp ground cloves

170 g butter (unsalted) softened

2 large eggs 

240 g sugar

350 g apple sauce 


  1. Preheat oven to 160 Celsius.  Prepare and grease a pound cake / loaf pan. 
  2. Whisk all dry ingredients in a bowl and set aside. 
  3. In a separate bowl, using a hand held beater or a standing mixer, beat butter and sugar on medium until pale and fluffy (around 1 minute).  
  4. Add one egg, mix until well combined. Repeat with 2nd egg and beat on medium until fluffy (around 2-3 minutes).
  5. Incorporate the apple sauce until combined. 
  6. Add the flour and mix on lowest speed until just incorporated. Do not over-mix. The batter will be thick and heavy. 
  7. Pour batter into cake pan and bake in oven for around 60-70 minutes.
