Torta de Santiago
Last week I really felt like baking so I made a traditional Torta de Santiago. I love the name of this delicious cake. My parents live in Santiago (Chile), and Helena named one of her boys Santiago. The cake is not from Chile though 😏– this is a Spanish cake which originated in the Middle Ages!
Torta de Santiago (in Galician) or Tarta de Santiago (in Spanish), literally meaning cake of St. James. The Galician for cake is Torta whilst it is often referred to Tarta, which is the Spanish word for it. The top of the pie is decorated with powdered sugar, usually masked by an imprint of the Cross of Saint James (cruz de Santiago) which gives the pastry its name.
This cake is not difficult to make at all and the flavours are AMAZING. I use lime in my take on this delicious Spanish dessert but you can use lemon also.

Ingredients
- 3 eggs , room temperature
- ¾ cup sugar (150 gr)
- 1 ½ cup almond flour(150 gr)
- ½ teaspoon cinnamon powder
- ¼ teaspoon salt
- Zest of 1 lime
- zest of 1 orange
- icing sugar , for dusting on top
Add eggs and sugar into a bowl and whisk until the mixture turns pale.
Add the rest of the ingredients, except for icing sugar and using a spatula, gently fold everything until well combine.
Pour batter into a 7 inch (18 cm) springform pan that has been buttered and floured. Bake in a preheated oven at 360ºF (180ºC) for 40 minutes or until golden brown and fully cooked.
Cool completely and dust generous amount of icing sugar all over the cake. Carefully remove the cut out. Slice and serve, enjoy! love, Caroline
