Today we celebrated our eldest's son's 10th birthday at a big, beautiful park in Lisbon named Tapada das Necessidades. And just like last year, he asked me to make him his favorite cake as his birthday cake. It's a classic and famous Swedish recipe called "Mockarutor" (direct translation "Mocha Squares"), which is basically made up of a chocolate-flavoured sponge cake, a coffee-flavoured frosting and topped with shredded coconut. It's so simple to make and so tasty! I actually made two cakes, one with the shredded coconut and one without, as quite a few people seem to not like coconut in baked goods very much (including my husband and youngest son). So in order to please everyone, I made two versions. Both were a big hit! 😊

INGREDIENTS:
Pan: Deep baking pan approx. 30cmx40cm
Cake:
- 150 grams butter, melted
- 2 eggs
- 300 ml (3 dl) sugar
- 450 ml (4½ dl) plain flour
- 3 teaspoons baking powder
- 2 teaspoons vanilla sugar
- 1 tablespoon cacau
- 150 ml (1½ dl) milk
- 350 ml (3½ dl) icing sugar (confectioners' sugar)
- 4 tablespoons (57g) butter, melted
- 4 tablespoons strong coffee
- 1 tablespoon cacau
- 2 teaspoons vanilla sugar
- 150 ml (1½ dl) shredded coconut
- Pre-heat oven to 225°C.
- Grease the pan and cover it with bread crumbs (or use parchment paper).
- Melt the butter and let it cool.
- Whisk the eggs and sugar together until the batter turns white and puffy.
- Mix flour, baking powder, vanilla sugar and cacau. Then add the mix to the batter along with the milk and the cooled, melted butter.
- Pour the batter into the pan, and bake on the lower level for 15 minutes.
- FROSTING: Mix together all the ingredients until you achieve an even, thick cream. Spread it across the cake when the cake has cooled and sprinkle shredded coconut on top. Cut the cake into squares before the frosting has solidified completely.
