Smashed Brussels Sprouts (BEST recipe ever!)

Oh Brussels sprouts.... one of the most underrated vegetables in the world. In the Netherlands these delicious green vegetables do not have the best reputation. In the old days they would be overcooked in salty water, till slightly mushy.
There are so many more things you can do with them - but first lets discuss benefits before I share the BEST recipe ever with you!
Brussels sprouts are rich in antioxidants, One study found that when volunteers ate about two cups of Brussels sprouts per day, damage at the cell level was slashed by nearly 30%! They’re high in fiber- this means they help regulate blood sugar levels, supports digestive health, and helps feed the beneficial gut bacteria tied to positive mood, immunity, and anti-inflammation.
One cup of cooked Brussels sprouts packs over 150% of the minimum daily vitamin C target, and they are loaded with vitamin K.
So, my amazing recipe:
Boil the brussel sprouts for about 8-10 minutes and then rinse with cold water. Lightly mash each brussel sprout. Toss with extra virgin olive, sea salt, and black pepper AND LOTS OF GARLIC POWDER (trust me), and roast in the oven for 20 minutes at 200°C until the outer leaves are golden and slightly crisp.
Kids approved 100% Husband approved also 😉
