ALMOND COOKIES
One of my favorite type of cookies are ALMOND cookies... Delicious crispy almond cookies with extra crunch due to the use of whole almonds in the dough.
This recipe is by Laura's Bakery. Try it, you will not regret it.

Although almonds are commonly referred to as a nut, they are actually teardrop-shaped edible seeds that are the fruit of the almond tree. There are loads of health benefits when you eat almons. They can help with weight loss, may help reduce risk of heart disease, moisturize skin and even help you eliminate cravings. So, we can ALMOST state that these cookies are healthy 😉, were it not for a little bit of sugar. ENJOY!
PORTIONS: 16 cookies
INGREDIENTS
- 120 grams unsalted butter
- 70 grams light brown sugar
- 1 tsp vanilla extract
- 100 grams almond flour
- 100 grams of flour
- pinch of salt
- 60 grams of almonds

INSTRUCTIONS
Mix the butter, sugar and vanilla extract until creamy. Then add almond flour, flour and salt and knead into a firm dough. Finally, add the almonds, knead them evenly through the dough.
Roll the dough and wrap it in foil. Place the roll of dough in the fridge for at least an hour to rest. The roll was about 6 cm in diameter for me.
Cut the roll of dough into slices and place the cookies on a baking tray lined with baking paper.
Bake the cookies at 180°C (top and bottom heat) for 12-15 minutes, or until the edges are golden brown.
Can be stored for 2-3 weeks in a drum, up to 3 months in the freezer.
