Fish stew (Salmon, Shrimp and leek)

Fish Stew

My husband made this fish stew the other day and the flavour was amazing. No more words necessary... just trust me and make it.

 

Ingredients

  • olive oil
  • 2 cloves of garlic
  • 1 (diced) onion
  • 200 gr leek
  • 1 tbs flour
  • 100 ml white whine
  • 200 ml Fish broth
  • 100 ml cream
  • 1 ts dijon mustard
  • sage
  • 2 tbsp fresh oregano
  • 100 gr Dutch shrimp
  • 400 gr Salmon (no skin)
  • 250 grams of mushrooms (quartered)
  • 25 gr butter

Heat some olive oil in the pan and fry garlic, onion and leek until the vegetables are soft. 

Add the flour, wine, fish broth and cream and stir until you have a slightly thicker sauce. 

Add some mustard, sage and oregano, bring to a boil and leave for about five minutes. Add the shrimp to the sauce. Meanwhile add some pepper to the salmon and some salt and put the fish in the sauce. Add the lid and wait about 10 minutes till the fish is ready. 

Meanwhile fry mushrooms on for 3 to 5 minutes and season with salt and pepper. Put the salmon on the plates with some sauce served with the mushrooms and fresh oregano.

We served it with grilled potatoes and it was absolutely delicious.
