Who can resist this famous, delicious Spanish tapas dish?! Not me! π It is yet another great appetizer my mom made for us during our Christmas trip to Stockholm. The recipe she likes to use is by Chef John whose YouTube channel is called Food Wishes (he also has a great brownie recipe btw, but that’s for another day). π

INGREDIENTS (2 large servings or 4 small):
- 1½ tbsp olive oil
- 454g (1 pound) shrimp (peeled & deveined)
- Salt to taste
- 6 cloves garlic (minced fine)
- ¼ tsp red pepper flakes
- 2 tbsp cold butter (cut in 4 pieces)
- 3 tbsp lemon juice
- 1 tbsp caper brine
- ⅓ cup chopped Italian parsley (keep some for garnish)
- Water as needed to thin sauce
DIRECTIONS:
1. Mix the caper brine with the lemon juice.
2. Put the skillet on highest heat and add olive oil. Wait until it gets really hot.
3. Add the shrimp. Let them sizzle for 1 minute. Sprinkle with salt.
4. Then toss them and let them sizzle for another minute. They shouldn’t be cooked all the way through, just halfway.
5. Add the minced garlic and chili flakes and cook for 1 more minute.
6. Add the lemon juice and caper brine mixture, 1 of the 4 chunks of butter, and half the parsley.
7. Stir it all together.
8. When the butter is melted, turn heat down to low and toss in the rest of the butter.
9. When all the butter is melted, it’s ready to be served! π₯³ Just adjust the seasoning by adding salt if needed. Also, if the sauce is a bit too thick, just add a splash of water.
I prefer this dish with some yummy, fresh baguette π₯ to dip and soak in the garlic sauce. Make sure to eat ALL the sauce! DO NOT let it go to waste! π
