These banana muffins are the perfect way to kick-start your morning! With homeschooling- kids, I need to find quick meals / snacks that’ll give them the energy they need to outlast the morning. It takes a lot out of them to stay continuously focused while studying on their own! I feel like they’re hungry all the time! Stockpiling a few of these, ensures that they’ll have a grab-and-go treat available at any time.
As I have chocolate monsters in my house (myself included), chocolate chips are almost always included in any banana snack / dessert I make. 😂🍫 ❤️ One can never go wrong when combining bananas with chocolate, am I right?
So, Wait no longer! Throw those moist nana-choco muffins in the oven! The smell is incredible! You won’t be disappointed!
INGREDIENTS:
200 g flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
4 medium ripe bananas
90 g sour cream (softened)
125 g sugar
2 small eggs (room temp)
1 tsp vanilla extract
2 tbsp milk
140 g chocolate chips
- Pre-heat oven at 170C and line a muffin baking tray with cupcake liners or lightly spray with oil.
- Sift together flour, baking powder, and baking soda into a large bowl. Add salt, cinnamon and nutmeg and whisk well.
- In a medium bowl, mash bananas, and mix in sour cream, sugar, eggs, vanilla and 2 tbsp milk.
- Add the wet ingredients into the dry ingredients and mix until just incorporated. Add the chocolate chips and gently fold in. Do not over mix.
- Using a spoon, scoop dollops of the mix into the cupcake tray and pop into the oven.
- Bake for 22-24 mins. Poke with a toothpick to check for doneness. The toothpick should come out clean.
