This might come as a surprise to all of you, but Sweden has really, really, really good pizza. Perhaps the best in the world! 😜 And within Sweden's pizza culture it is custom to serve something called "pizza salad". It's usually a complimentary side order at every pizzaria. Every true Swede knows that a pizza meal is never, ever complete without this extraordinarily, delicious cabbage/coleslaw salad. So today I'm going to teach you (AND Pia's chef husband Salvatore) how to make this crunchy, juicy salad. 😁
By the way, it actually goes with almost everything, such as chicken, pork or beef.
Note: As you can see, one of the ingredients is an acetic vinegar/water mix. It's sort of a secret ingredient I guess. If you can't find it, no worries. I think the salad will still taste amazing. However, if you can, try and buy the following acetic vinegar in a store, or on Amazon for example, to make the mix: Perstorp Ättika 24% (Acetic Vinegar for Pickling).

INGREDIENTS:
- 500 grams white cabbage, shredded
- Approx. 100 ml store bought, pickled red bell peppers, chopped
- 2½ tablespoons olive oil
- 1 tablespoon white wine vinegar
- 2 tablespoons acetic vinegar/water mix (optional, but highly recommended)
- 2 teaspoons sugar
- 1 teaspoon dry oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
DIRECTIONS:
- Shred the white cabbage and chop the red bell peppers.
- To make the acetic vinegar/water mix: Mix 1 teaspoon acetic vinegar 24% (for pickling) with 6 teaspoons water.
- Mix all liquid ingredients, sugar and spices in a large bowl to make the dressing.
- Add the shredded white cabbage to the bowl and toss.
- Add the chopped, pickled red bell peppers to the bowl and toss.
- Leave the salad to rest in the fridge a few hours or overnight.
