CUPCAKES FOR LUCA 🥳
My eldest son turned 15 recently (OMG 15!) and for his birthday I made these cupcakes and also a Torta de Santiago. The cupcakes are simple but delicious and always a favorite at our parties❤️ I use the recipe by @rutgerbakt - have your kids help decorate😄Recipe
190 gr flour
220 gr sugar
1 ½ tsp baking powder
¼ tsp salt
115 g butter, at room temperature
125 gr sour cream
1 egg
2 egg yolks
1 ½ tsp vanilla extract
Preheat the oven to 175°C.
Line a cupcake tin with paper cups.
Place the flour, sugar, baking powder and salt in a bowl and stir together. Add all other ingredients and mix until smooth, about 1 minute. Fill the paper molds 2/3 full with the batter. An easy way to do that is with an ice cream scoop.
Bake the cupcakes for 22 to 26 minutes until golden brown and cooked through. Remove them from their metal molds immediately after baking and let them cool on a wire rack.
