The Green Goddess Dressing



Your side of salad will never be dull and tasteless again! The Green Goddess Dressing by Elise Bauer is the best! My sister Anna found this recipe and sent it to me the other day and now I can't get enough of it. Not only is it a salad dressing, but can also be served as a dip, or as a spread on crackers.

FYI, for those of you who aren't anchovy fans, give it a try at least. I'm not a huge fan either, but you really can't taste them. I promise!

INGREDIENTS:

  • 2 teaspoons anchovy paste (or 2-3 canned anchovies)
  • 1 small garlic clove, minced
  • ¾ cup mayonnaise
  • ¾ cup sour cream
  • ½ cup parsley, chopped
  • ¼ cup tarragon, chopped
  • 3 tablespoons chives, chopped
  • 2 tablespoons lemon juice
  • Salt and black pepper to taste 

DIRECTIONS:
  1. Put all of the ingredients in the bowl of a blender or food processor and blend or pulse until you get an evenly smooth dressing, about 30-45 seconds.
  2. Serve as a dip, or toss with salad greens for a dressing.
  3. The dressing should last about a week in the fridge.
