 Salmon con Salmoriglio ๐Ÿ˜‹

One of my new favorite recipes for salmon. We were watching one of Antionio Carluccio ‘s old DVDs on cooking in Italy. Don’t laugh too much, we still have a DVD player and we watch old shows on it that don’t come out on Apple/Netflix ๐Ÿ˜‚

In one of the episodes he makes this dish and we could not wait to try it.
Salmoriglio is a southern Italian condiment made of lemon juice, olive oil, garlic, salt, and herbs. It is common in Sicily and Calabria as an accompaniment to seafoods or meats, especially swordfish.

Ingredients

1/2 cup extra virgin olive oil
Juice from 1 lemon
Zest from 1/2 a lemon
2 T fresh oregano, finely chopped, save 4 sprigs for garnish
5 T fresh Italian parsley, finley chopped
5 T fresh Mint
2 clove garlic, minced
2 T hot water
Kosher salt and fresh ground pepper, to taste
Pinenuts
Breadcrumbs

Recipe

Prepare the salmoriglio sauce. Mix the lemon juice, and extra virgin olive oil. Then, add the finely chopped garlic, herbs, anchovy, salt, and pepper.

Finally, prepare the fish: brush the fish with the salmoriglio sauce to season. Add some pinenuts and breadcrumbs. Put in oven on 200° for about 18 minutes.
