This is my go-to meal when I have no idea what to make for dinner, and it’s always a success. I usually make it with spaghetti, but this time I decided to make it with Mezzi Rigatoni pasta as it perfectly distributes the pancetta/bacon and onion. (FYI, this is not an original carbonara recipe, but my special version.) 😋

INGREDIENTS:
- 300 g spaghetti or Mezzi Rigatoni
- 1 cup pasta water
- 150 g bacon/pancetta, cut into cubes
- 1 yellow onion, chopped
- 1 garlic clove, minced
- 2 eggs
- 100 ml heavy cream
- 100 g Parmesan cheese, grated
- Salt and pepper for seasoning
DIRECTIONS:
1. Boil the pasta until al dente.
2. Heat a large frying pan and fry the bacon. When crunchy, transfer onto a plate lined with paper towel.
3. Keep some of the bacon fat to fry the chopped onion. Lower the heat so that the onion doesn’t burn.
4. In the meantime, whisk together the eggs and the cream. Mix in the Parmesan cheese, minced garlic, salt and pepper.
5. Strain the pasta. Keep some pasta water.
6. Pour the pasta into the pan with the bacon and onion and mix well.
7. Add the egg/cream mix and continue to stir well.
8. If necessary, add some of the pasta water to make it more creamy.
9. Serve immediately with some freshly ground black pepper.
